Villa L'Olmo, Diadema's latest project looks to the past, to the history of the Giannotti family and their influence on the Impruneta area since the mid-1700s.

Villa L'Olmo, the family country residence, has always represented the retreat of the important family and even now identifies the love and important bond with the territory of Impruneta. In fact, the elegant label depicts the country estate where the family still resides. Villa L'Olmo di Diadema is a blend of Cabernet Sauvignon, Cabernet Franc and Merlot carefully cultivated in the Impruneta vineyards.

VINIFICATION

The carefully selected grapes are harvested manually when perfectly ripe, after delicate destemming, the grapes are softly pressed and vinified in containers at a controlled temperature. Fermentation is carried out by yeasts naturally present on the grapes and contact with the skins is prolonged for approximately 4 weeks, during which daily pumping over is carried out with the aim of extracting the noble substances contained in the skins. Once the skins and the wine have been separated, the malolactic fermentation begins which occurs spontaneously, partly in steel and partly in barrique. This is followed by refinement of the individual varieties for approximately 16-18 months in French oak barriques. The wine is not subjected to clarification or stabilization to maintain its organoleptic characteristics unaltered. It is then bottled and subjected to subsequent refinement for at least 6 months before being placed on the market.

TASTING NOTES

Wine with a typical intense ruby red color. On the nose stand out notes of small ripe red fruits, sweet spices and tobacco. On the palate it is well structured, enveloping and with a pleasant fruity aftertaste which gives it pleasant drinking and persistence, an elegant wine, with excellent structure and tasting complexity.
