  The Tuscan production of Extra Virgin Olive Oil by Fattoria Villa l'Olmo dates back to the first half of the 1700s
The olive grove areas occupy about 23 hectares
The varieties are Moraiolo, Frantoio, Leccino and Pendolino
Pruning takes place every two years
The olive harvest is MANUAL from the end of October until the first ten days of November
The olives are cold pressed ON THE SAME DAY, as they are harvested in the oil mill inside the property.

Diadema Extra Virgin Olive Oil is the result of a careful selection of the olive production of Fattoria Villa l'Olmo.

 

It has a bright and intense olive green color at the ideal point of ripeness with delicate golden yellow notes and good consistency. On the nose it arises in a persuasive way with aromas of freshly cut grass and green tomatoes.

 

On the palate, complex flavors of sweet almond and aftertaste with hints of artichoke and ripe olive reach the palate; in the finish it is fruity, with well-dosed spicy notes and a pleasant and delicate spicy sensation in the extreme closure.

It is a particular product but at the same time capable of enhancing the flavors of the dishes.
