DIADEMA "Candegli" was born from the desire to discover new flavors and tasting experiences with ancient winemaking techniques already in use during the Etruscan civilization period. It therefore represents a project entirely aimed at returning to the origins, to the past of our Company and of our Family and of the territory to which we belong. Starting from the very name of the wine. Candegli is in fact the name with which the hill was properly indicated, within the territory of Impruneta, on which exactly the Farm stood, now Relais Villa Olmo with the Diadema Cellar and the ancient Mill with millstones for pressing the olives and production of extra virgin olive oil.

Diadema therefore decided to invest in a collection of terracotta amphorae, a natural continuation of the project in the interest of preserving history and tradition.

The Chianti region has been known since ancient times for the production of terracotta and  the city of Impruneta is particularly famous for its talented craftsmen. 

The art of working with terracotta is handed down from generation to generation and is defined as the civilization of terracotta. Historical documents attest that a local guild of terracotta craftsmen already existed in 1308: an association that brought together and assisted the producers of terracotta jars, vases, tiles and bricks. In 1419 Filippo Brunelleschi chose Impruneta terracotta to cover the dome of the Cathedral of Santa Maria del Fiore in Florence. 

Starting from the discovery of an ancient drawing dating back to the 1700s, we moved on to the realization  completely manual of 5 jars unique in design and size in uncoated terracotta of 6 hl each . 

The manufacture of the jars was commissioned from the oldest furnace operating in the Impruneta area, M.I.T.A.L. of the Mariani brothers. An authentic guarantee of respect for traditions and quality starting from the design ability and the completely handcrafted realization to the choice of air drying times and terracotta firing temperatures.

CANDEGLI is obtained from a meticulous selection of Sangiovese grapes with a small amount of Cabernet Sauvignon grown in the Impruneta area and aged in terracotta amphorae; a tribute to our territory and to the traditions that have always inspired our project with the desire to revive ancient processing techniques already used at the time of the Etruscan civilization in a modern key.

VINIFICATION
The manually harvested grapes ferment naturally without the use of selected yeasts in cement containers at a controlled temperature of around 25°C, the contact on the skins is around 2 weeks.
The wine ages for about a year in terracotta amphorae where, thanks to the particular micro-oxygenation of the material, the wine acquires complexity and pleasantness that make it harmonious and fruity.

TASTING NOTES

Intense purple color with notes of blackberries, strawberry jam and blackcurrant. It has a beautiful floral freshness, Damascus rose, with mentholated and tantalizing references of eucalyptus and glacial mint. In the mouth the nice grip of the tannin is striking, the slight herbaceous notes, which blend with green pepper, tobacco and hints of Mediterranean scrub from which it also seems to draw laurel and mastic in the agile and fresh finish but always intensely fruity and intimately sweet.

TASTING NOTES

The color of the wine is bright ruby red, the complex nose is very varied with notes of ripe red fruits enhanced by balsamic sensations with characteristic mineral-earthy nuances deriving from the aging in terracotta amphorae.

The tannins are elegant, fully integrated into a well balanced structure, medium bodied with a savory and flavorful finish.
